When cooking fruitcakes in a pressure cooker, you'll need to have the correctly shaped pan that will fit inside the cooker. Because it is so dense, a fruitcake should be cooked in a special, decorative ring mold, bundt pan, or a tube pan with a hollow center to ensure the middle is evenly cooked all the way through. Make sure that the fruitcake pan will fit comfortably inside your pressure cooker, leaving 1/2 inch clearance around the sides. See the chart, Pan Sizes and Volume.

A vintage aluminum tube pan.Metal tube pans and bundt pans work best because they conduct heat better and faster than glass or ceramic pans, and they may even give a light crust to you cakes. Stainless steel is the first choice as it will not react with any food. Decorative copper and tinware molds are excellent for adding a decorative shape to steamed cakes. Aluminum pans may be used too, but they may react to certain ingredients. Silicon bakeware comes is many smaller sizes and shapes than make them well suited for the pressure cooker.

 

If using a decorative glass, ceramic or porcelain pans or molds, you will need to increase cooking times by an additional 10 to 20 percent depending on the thickness of the container.

A heavy guage aluminum bundt pan with a non-stick coating.Which ever pan you choose for your fruitcake, be sure that both the mold and thelid are generously buttered and dusted with flour. The fruitcake needs to be covered during cooking and if your mold comes with a lid that's great, otherwise grease and flour a square of aluminum foil and crimp ot tightly over the top. Depending on the rim of your pan, you may also want to tie some string around the pan to hold the foil firmly in place throughout the cooking cycle.

Fruitcakes, as a rule, do not use leavening agents other than eggs to rise, so the batter can fill the pans up to two-thirds full. It's best to spoon the heavy batter into the pan and then pack it firmly, leveling the top before tapping pans on the countertop to remove any trapped air bubbles. Use an elevated rack to accommodate the extra amount of water needed for longer cooking times. Use foil helper handles to lift the heavy fruitcake pan in and out of the pressure cooker.
